I think the size of the head will be larger but bald.

Like we did a thousand years ago... However I think God will have returned by then and there won't be humans, just spirit beings.

Humans didn't look much different a thousand yrs ago I doubt they'd look much different in the next thousand.  Evolution is a slow process.

Humans will look like humans, even if evolution was correct, it would take millions of years not thousands of years to notice any changes.
