What you were seeing was an actor in a gorilla costume.
That's an actual gorilla with a human head. Their own heads are detachable, as they have always been.
In the original "King Kong" with Fay Wray, King Kong was actually an 18 inch model.
They also had a full-size Kong hand to grab Fay Wray with.
