Icelandic would be the most interesting to learn. Then I also like how Norwegian sounds and it would be a very easy language for me to learn if I would put more effort in it. It would be really fun to speak Danish too since it sounds different compared to Swedish and Norwegian. And I think their accent is very funny.
I am working on French now, I have always loved the language, and my nephew speaks it now, so I can keep in practice if I continue with it.

I would like to at least understand basic Arabic...honestly just to mess with the local store owners who frequently speak Arabic when I am in their stores...lol
