Well I have a <big> weekend planned because I hope to make teff flour cookies. Maybe you already know, teff is a tiny tiny grain from Africa, and the flavour is delightful. The cookies also use oat flour, so there is no wheat involved. They are mainly sweetened with banana, along with only one tablespoon maple syrup...well, I do add some chocolate chips too, but they are mini-chocolate chips...they have some cinnamon and walnuts, too.
So you end up with a lovely treat, about as wholesome as you can get and still have a delicious and decadent cookie.
