I don't find mushrooms to be refreshing at all. I find them to be savory. Earthy, even.

I find mushrooms very refreshing on pizzas. Yes, they taste like gummy yack, but I still like them for some strange reason.
I find basil and a spritz of lime to be refreshing on a pizza. To each their own pie!
The fly agaric on top is pleasant to see, but poisonous - as all of us know.

I would choose chanterelles, also known as girolles (Cantharellus cibarius) - they are delicious!

I love chanterelles!
They are funny, though, as all mushrooms are. They aren't animals. They aren't vegetables. They just are... Weird. There is no real DNA/RNA to trace them back to anything. They just are. Were. Have been. Like... Forever.
Yes, of course, fungi have their own "kingdom".
